Unique Valentine Day Recipe from 1950's Chicago
Chicken & Cranberry Salad
This is a Unique Recipe that no where to be found except with her. She got this from her Swiss Grand Mother. We thank Joan Westerling for her generous contribution and agreeing to make her secret recipe public. She enjoys sharing this with her friends and family. She also loves X'Mas and decorate her whole house and each room has a X'Mas tree. Her tea cup collection is amazing!

Soften one envelope ( 1 Tbsp) unflavored gelatine in 1/4 cup cold water. Dissolve over hot water.
Blend in 1 cup mayonaise dressing
1/2 cup water
3 Tbsp lemon juice
3/4 tsp. salt
2 cups diced cooked or canned chicken or turkey
2 Tbsp. chopped parsley
Pour into a 10 X 6 or 8 X 8 inch pan that has been (I use 7 1/4" X 12" glass pan) brushed with salad oil, chill until firm
Soften 1 envelope (1 Tbsp) unflavored gelatine in
1/4 cup cold water. Dissolve over hot water.
Add 1 one pound can (2 cups) whole cranberry sauce.
1 nine ounce can crushed pineapple
1/2 cup broken walnut
1 Tbsp. lemon juice
Pour over first layer. Cut in squares and serve on lettuce. Can be made the day before.
